New Seaside Destination, Aquí Me Quedo, Debuts at Rosewood Mayakoba

Aquí Me Quedo is Rosewood Mayakoba‘s newest destination, designed to be a place to dine, relax, play and enjoy the Caribbean breeze. Named for the feeling “Here I Stay,” this seaside outlet will encourage you to do just that—stay.

The Look

An unrivaled retreat fresh from a $2.5 million investment, Aquí Me Quedo debuted this past November. Inspired by the residential style of a grand seaside home and the relaxed, natural beauty of nearby Tulum, this new adults-only, private enclave features open-air living and dining rooms, three infinity-edge pools sunken in the sand; La Cocina, an open kitchen for interactive culinary experiences; and La Palapa, a 2,200-square-foot private event beachfront indoor/outdoor palapa.

Set amongst white sand beaches with views of the sparkling Caribbean sea, Aquí Me Quedo combines elegant, handcrafted artisanal furnishings with the raw beauty of natural elements to embody the essence of barefoot luxury. The exclusive design, envisioned by Zurcher Architects showcases Mexican design elements created by local artisans including handmade clay pieces from Colectivo 1050, based in Oaxaca, and lava rock from Ayres, based in the Yucatan, taking a modern approach to century-old traditions. 

The Amenities

Each of the three infinity edge pools will offer distinctive amenities that rotate seasonally, such as poolside spa treatments, twists on popsicles and frose, and more, all surrounding an Oceanside firepit. La Palapa will double as a fitness pavilion, featuring morning spin and yoga classes. Guests are invited to settle in and enjoy life at La Sala and La Terraza, Aquí Me Quedo’s residential-style living rooms overlooking the sand and the sea.

The Food

At Aquí Me Quedo, Chef Juan Pablo Loza channels the vibrant, festive feel of a traditional Mexican cantina where guests gather to graze and sip throughout the day. At La Cantina, the menu brings together the best of Mexican street foods and drinks with freshly-made, Caribbean coastal-inspired fare. Signature offerings include Tikin Xic, a banana-leaf wrapped, achiote-rubbed local fish; refreshing ceviche and aguachile; made-to-order tacos, tortas and memelas; and charcoal-grilled vegetables and meats. La Cantina will also feature an extensive selection of agave spirits, proprietary to Rosewood Mayakoba, chilled coconuts, an Agua Fresca of the day and “El Ponche,” Aquí Me Quedo’s take on the classic punch served with a Mexican twist. For beer lovers, Rosewood Mayakoba is partnering with nearby Cerveza Akumal and its Brew Master Alex Lira to develop a blond ale brewed with local citrus, made exclusively for Aquí Me Quedo.
