Named after the Amate tree that’s located in the resort’s surrounding lagoon, this unique restaurant is designed to resemble a house and is built around a courtyard that overlooks the lagoon. Open for dinner only, this sophisticated outlet features a variety of diverse and intimate rooms to dine in, each with residential furniture, shelves full of artifacts and large format art—just like one would find in a house. The rooms include the “Studio” lounge, “Library,” “Estancia” and the “Comedor.” The kitchen is led by Head Chef Ernesto Torres who created the menu which is full of diverse Latin cuisine.

Tastes: Soups, salads, meats, poultry and fish inspired by different Latin American countries.

Situated in the center of the resort, this all-day dining restaurant is located poolside and offers views of the mangroves through its floor-to-ceiling glass doors and windows. Inside, tall turquoise ceilings resemble the sky and water and are accented by large hanging pendants and exposed wood beams while stone, locally handcrafted tile and local tzalam wood make up the rest of the interiors which also feature two open kitchens and a bar terrace.

Tastes: Market-to-table menu concept with an emphasis on seafood.

OllaTaco and OllaCeviche

These vibrant and colorful, breezy beachfront outlets are located next to each other at the resort’s oceanfront pool. Surrounded by sand, both venues face the ocean and feature similar architecture with façades that open to stunning views. Inside, an open kitchen and bar highlight both outlets along with colorful decor, vibrant pendant lighting, stained wood and tiles, marine rope and wood boards, making for chic yet casual seaside outlets.

OllaTaco Tastes: Market-style feast of tacos, Yucatán specialties, special sauces made with local produce and locally crafted artisan beers. The restaurant’s resident “tacologist” teaches weekly taco-making classes highlighting a variety of salsas and taco fillings.

OllaCeviche Tastes: Fresh ceviche, sharing plates and a tequila bar with more than 25 different tequila and mescals including an Andaz Mayakoba custom crafted tequila. Special ceviche, guacamole and taco cooking classes along with mezcal, tequila and craft beer tastings are also offered.
