Sunday, December 24 – La Noche Buena
In Mexico, “La Nocha Buena” is celebrated on Christmas Eve to mark the end of The Posadas, a series of processions and parties to celebrate the upcoming holidays. Guests can celebrate at Don Manuel’s with a cocktail party hosted by the resort’s general manager and management team. The party will include holiday cocktails accompanied by “Villancicos” and a string quartet featuring Mexican Christmas carols. Stick around for a four-course Christmas Eve dinner at Don Manuel’s before heading to Su Cocina for a selection of desserts. El Farallon is offering bucket specials seafood and Champagne pairings at the Champagne Terrace, while the Beach Club will be serving up its a la carte menu in the day and festive specials during the night.
Monday, December 25 – Christmas Day
Head down to the lobby at 11 a.m. to hear the rumbling motors of Santa’s Harley Davidson as he and his elves arrive to deliver presents for every child. Celebrate with Mexican chocolate and gingerbread cookies. Afterwards, Don Manuel’s is serving a full buffet with a special kid’s corner and a selection of Mexican Christmas specialties. For dinner, Don Manuel’s will be serving a traditional family-style Christmas dinner while El Farallon is offering bucket specials seafood and Champagne pairings at the Champagne Terrace, while the Beach Club will be serving up its a la carte menu in the day and festive specials during the night.
Tuesday, December 26 – Tiki Lounge/BBQ Night
Enjoy the sunset with a tempting grill selection of local seafood and house smoked meats while listening to stories of the Baja around bonfires and sipping on tiki special cocktails.
Wednesday, December 27
During the day little ones can make sweet pizzas at Su Cocina with the pastry team while enjoying vanilla milkshakes and at night, Don Manuel’s pool deck will offer a selection of Cuban, Mexican and South American cigars paired with signature cocktails and special pairings made with a unique selection of Bourbon, rum, aged tequila, Mezcal and whiskey. Don Manuel’s and El Farallon will serve regular menus with live music and The Beach Club will serve its “a la carte” menu and festive specials during the night.
Thursday, December 28
Head to the conference room for a family time movie night where Chef Gustabo will prepare snacks and sweets for all ages. Don Manuel’s and El Farallon will serve regular menus with live music and The Beach Club will serve its “a la carte” menu and festive specials during the night.
Friday, December 29
Enjoy a Mexican fiesta at The Beach Club complete with live cooking stations, hot displays, a sweet station and more. Top off the night at La Palapa where coffees and desserts will be served. Don Manuel’s and El Farallon will serve regular menus with live music and The Beach Club will serve its “a la carte” menu and festive specials during the night.
Saturday, December 30

Sunday, December 31
Start the night off at the lobby for a New Year’s Eve reception with Champagne and crafted cocktails. Don Manuel’s will host a five-course gourmet dinner complete with a live band. Afterwards, a New Year’s Eve countdown party with fireworks will commence on the bar terrace with sounds from Kilometro Band. Guests choosing to dine at El Farallon will also enjoy live music and Mariachis will escort diners to join the party at Don Manuel’s afterwards. The Beach Club will also be serving up specially prepared dinner specials along with its “a la carte” menu.
