Authentic Baja Style Tacos (makes 4 servings)
- 2 cups flour
- 1 tbsp. baking powder
- pinch of salt
- pinch of pepper
- 300 ml cold beer
- 3 pieces cleaned fresh shrimp
- 3 pieces strips of fresh grouper
Directions: Sift the flour and baking powder together in a large bowl. Add a pinch of salt and pinch of pepper to mix.
Add the beer to the flour mix in small batches to prevent lumps.
Season the shrimp with salt and pepper. Toss the shrimp in a little flour and shake off excess.
Dip the shrimp in the beer batter until evenly coated. Deep fry shrimp in 340-degree oil until golden brown.
Repeat the same process with the grouper.
