Cocina de Autor at the brand new Grand Velas Los Cabos was recently named among CNN’s Best New Restaurants for 2017. The signature restaurant, which was originally launched at sister property Grand Velas Riviera Maya, is helmed by two-star Michelin Dutch Chef Sidney Schutte along with Vincent Colauto as chef de cuisine. Chef Schutte’s Dutch heritage combined with his passion for traveling and four years spent in Asia give him a unique culinary edge. Utilizing European techniques and fresh Mexican ingredients, Chef Schutte has crafted an exquisite opening season menu. Highlights of the menu include langoustine cooked in buttermilk and topped with endive, leeks, dill oil; red snapper served over mashed Tonka beans and topped with oyster, Iberian ham, lychee foam; and goat cheese ice cream dressed with grilled pineapple, lime and hibiscus. The menu features eight courses with wine pairings nightly.
The tasting menu with wine pairing is available to all resort guests at no additional charge as part of the all-inclusive rate. Cocina de Autor is open for dinner from 6 p.m. to 11 p.m. daily. Reservations are required.
